In part one of our two-part interview with John Heckathorn, noted food writer and man-about-town, he gives us his view of dining in Honolulu and why it's so hard for new places to open. We talk about Hawaii Regional Cuisine at this point in time and why the changes in our dining scene are coming from the bottom up. He also explains why he loved The Third Floor so much. In part two (which will be in our next podcast), we will chat about what's happening with all the Japanese places opening and what's up with Chinese restaurants.

Elizabeth Andoh, the world's foremost English-speaking Japanese culinary scholar is our guest for Podcast No. 22. In a fascinating conversation we discuss the philosophy of washoku or 'food in harmony' as it applies not just to Japanese food but to all cuisines. We also talk about her experiences as a young American woman living in the remote Japanese countryside of Shikoku in the 1960s where she was first exposed to the application of washoku principles in daily life. The interview was recorded via telephone while she was visiting New York from her home in Tokyo.

The back story on this book is fascinating and Wanda tells it with real heart. It was obviously a project she is passionate about. In our interview with Bill Tobin, Managing Partner of Tiki's Grill & Bar and Chairman of the Hawaii Restaurant Association, diners will learn about the major challenges facing the restaurant industry in Hawaii now - I was surprised to learn that tip pooling (a not uncommon practice in some places) can be construed as illegal. Bill also talks about the economies of scale and how Mom & Pop places can compete with the big, bad boys of the national chains. We wind up our interview with the usual interesting conversation about places to eat and favorite foods.

In the news, changes are afoot at two of Honolulu's restaurants with some chef shifting going on. Get the details on the 4th Annual SPAM Jam in Waikiki and the upcoming Taste of the Stars at Leeward Community College.

Fine fair weather and trade winds have helped to stablize the statewide crop situation. We have a crop-by-crop overview of the current conditions.

We also interview Tony Liu of August, located in New York. Tony was here in support of the Hawaii Statewide Student Culinary Competition at KCC.

The wet weather has had a dramatic effect on local produce. We have a crop report detailing the losses.

There are new restaurants opening. We discuss Rokkaku and Islands Fine Burgers & Drinks at the Ala Moana Shopping Center, and Uncle Bobo's Smoked BBQ in Kaaawa. One of our readers gives a thumbs up to Two Sisters Bento on Pensacola.

Executive Chef Dan York has created a special menu for the evening which includes recipes from Lucy Saunders' soon to be released cookbook, Grilling with Beer. Saunders will be at the event to answer all your beer questions.

Philippe Padovani grants us a few minutes to discuss his new venture: Padovani's Chocolates. He tells us why 66 percent is better.

News of a Chinatown Restaurant from the "we told you so" files. We've also found three new restaurants. Los Chapparos is located in the McCully area while huge restaurant chain Romano's Macaroni Grill opened in the Ala Moana Center and Coffee Bean & Tea Leaf has opened two stores in Manoa and Kailua. We spend a few minutes with Rick Chang of Foodland Supermarkets.

With the assitance of Marianne Schultz, we were able to interview Kerry Simon of Simon's Kitchen and Bar in the Hard Rock Hotel in Las Vegas. Kerry just won as the challenger on Iron Chef America. And, he is slated to open a new restaurant on Maui next year.

There is lots of news this week including Aloun Farms, Auntie Pasto's and the Third Annual Race for Rice fundraising effort which united Jamba Juice and the Hawaii Foodbank.
